Jalapeño Poppers
Ingredients:
- 10–12 fresh jalapeños
- 1 (8 oz) package cream cheese, softened
- 1 cup shredded cheese (cheddar, pepper jack, or your favorite blend)
- 1–2 tablespoons of your favorite BBQ rub (plus extra for topping)
- 10–12 slices of bacon
- Toothpicks
Instructions:

Prep the Jalapeños:
Slice each jalapeño in half lengthwise and remove seeds and membranes (wear gloves if sensitive to heat). -
Make the Filling:
In a bowl, mix the softened cream cheese, shredded cheese, and 1–2 tablespoons of your favorite BBQ rub until well combined. -
Fill the Peppers:
Spoon the cream cheese mixture into each jalapeño half, filling them generously. -
Wrap with Bacon:
Wrap each filled jalapeño half with a slice of bacon. Secure with a toothpick. -
Season Again:
Sprinkle a light dusting of BBQ rub over the top of each wrapped popper. -
Grill to Perfection:
Place poppers on the grill over indirect heat. Close the lid and cook for 30–45 minutes, or until the bacon is crispy and the peppers are tender. -
Serve & Enjoy:
Let cool slightly before serving. Great as an appetizer or BBQ side dish!
