Peach Cobbler Recipe
Ingredients
- Butter, for greasing the dish
- 6 cups fresh peaches, peeled, pitted, and sliced (canned peaches can be used as well. You can also use apples instead.)
- 1/2 cup granulated sugar
- 1/4 cup dark brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon (add more to taste if desired)
- 1 teaspoon vanilla extract
- Pinch of salt
- Pinch of ground nutmeg
- Juice of 1/2 lemon
Decadent Topping:
- 2 tablespoons butter, softened
- 1/2 cup self-rising flour
- 1/4 cup sugar
- Pinch of salt
- 1 egg, beaten
- 1 cup whipping cream, chilled
- 1/4 cup confectioners' sugar
Directions
- Preheat the oven to 375°F (190°C).
- Prepare the peaches: Ensure that the peaches are ripe and flavorful. In a large pan, combine the peaches, granulated sugar, dark brown sugar, flour, cinnamon, vanilla, salt, nutmeg, and lemon juice. Cook over medium heat, bringing the mixture to a simmer. Reduce to low heat and allow the peaches to become tender. Taste and adjust the cinnamon or other seasonings as desired.
- Assemble: Lightly butter a 9x9-inch baking dish. Transfer the peach mixture to the prepared baking dish.
- Prepare the topping: In a medium bowl, combine all the topping ingredients with a wooden spoon to form a batter. Dollop the batter in various spots on top of the peach mixture. The batter will spread as it bakes.
- Bake: Place the cobbler in the oven and bake until the crust is golden, about 30 minutes.
- Sprinkler some cinnamon on top of the baked crust to enhance the eye appeal as well as flavor. (Again, I love lots of cinnamon).
- Serve: Remove from the oven and let cool slightly. Serve warm with your favorite ice cream.
