Peach Cobbler

Peach Cobbler Recipe 

Ingredients

  • Butter, for greasing the dish
  • 6 cups fresh peaches, peeled, pitted, and sliced (canned peaches can be used as well.  You can also use apples instead.)
  • 1/2 cup granulated sugar
  • 1/4 cup dark brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon (add more to taste if desired)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Pinch of ground nutmeg
  • Juice of 1/2 lemon

Decadent Topping:

  • 2 tablespoons butter, softened
  • 1/2 cup self-rising flour
  • 1/4 cup sugar
  • Pinch of salt
  • 1 egg, beaten
  • 1 cup whipping cream, chilled
  • 1/4 cup confectioners' sugar

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the peaches: Ensure that the peaches are ripe and flavorful. In a large pan, combine the peaches, granulated sugar, dark brown sugar, flour, cinnamon, vanilla, salt, nutmeg, and lemon juice. Cook over medium heat, bringing the mixture to a simmer. Reduce to low heat and allow the peaches to become tender. Taste and adjust the cinnamon or other seasonings as desired.
  3. Assemble: Lightly butter a 9x9-inch baking dish. Transfer the peach mixture to the prepared baking dish.
  4. Prepare the topping: In a medium bowl, combine all the topping ingredients with a wooden spoon to form a batter. Dollop the batter in various spots on top of the peach mixture. The batter will spread as it bakes.
  5. Bake: Place the cobbler in the oven and bake until the crust is golden, about 30 minutes.
  6. Sprinkler some cinnamon on top of the baked crust to enhance the eye appeal as well as flavor. (Again, I love lots of cinnamon).
  7. Serve: Remove from the oven and let cool slightly. Serve warm with your favorite ice cream.
